Ben Tish is an experienced Chef, Restaurateur, Food Consultant, Cookbook Author and Cookery Teacher.
His latest Cookbook is "Sicilia: A love letter to the food of Sicily" published by Bloomsbury.

Ben will take you on a private and intimate journey around the green and lush lands of Mt. Etna.




About Etna Volcano and Etna Wine Region
Etna is the greenest area of Sicily and the home of many agricultural entrepreneurs of Sicily that pioneered the production of Etna wine and exported it globally since the late 1880. The landscape of Etna is characterised by terraced hills where autochthone grapes and olive trees have been cultivated for centuries.
This is one of the oldest agricultural areas of Sicily since the times when the Previtera family moved here at the beginning of the 16th century and introduced many wines variety such as Nerello Mascalese in their lands.
Linguaglossa is situated on the north side of Etna which provides a mild climate that benefit from the wind of the Ionian Coast.
DAY BY DAY ITINERARY
DAY 1 | APRIL 28
Arrival at Linguaglossa
Check-in at Palazzo Previtera and enjoy a welcome aperitif in the enclosed garden.
Visit the Palazzo together with the actual owner, Alfio, who will be your host for the following days.
Join a shared dinner at a local Trattoria and have a walk in Linguaglossa
DAY 2 | APRIL 29
After breakfast, get ready for a nature hike on Etna volcano. tracing the old routes of German geologist Wofgang Sartorius Freiherr von Waltershausen, the first scholar of Etna's volcanic activities. Explore the wildest part of the mountain with a 2-hours hike among the Sartorius Craters, a button-line of seven extinct craters, and the lava flow that originated during the eruption of 1865. Observe the endemic species, local wildlife, and the volcanic bombs.
Join one of the most ancient wineries situated on the Eastern slopes of Etna. Visit the vineyard, and be delighted by an exquisite lunch paired with wine from the estate.
In the afternoon, participate in the first cooking class masterfully conducted by chef Ben Tish. Over dinner you will learn more about Etna wines thanks to a Masterclass held by a knowledgeable wine expert.
DAY 3 | APRIL 30
Join a farm located in the Alcantara Valley, characterised by a volcanic rich soil and water streams. Learn about the autoctone crops of the farm together with the young farmers and participate in a foraging activity, collecting wild edible herbs and plants. Taste over a light lunch the precious oil and wine produced on the estate.
Digging deeper into Sicilian gastronomy, an award-winning pastry chef will show us the process of Granita-making how it was made before the arrival of electricity and machines.
In the afternoon, participate in the second cooking class with Chef Ben Tish and a farewell dinner.
DAY 4 | MAY 1
Our time together has come to an end. We hope the energy of the volcano and these insights on Sicilian culture will nurture and inspire your creativity for a long time to come.

Palazzo Previtera - Linguaglossa
Palazzo Previtera is a family-run boutique hotel on the north side of Etna. Built in 1649, it offers eight rooms that tell the history of Etna, the greenest area of Sicily.
You will be enchanted by the original decorative ceilings of its rooms; the geometric tiles and the beautiful original antiques will show you the history of interior design in Sicily.
You will learn how food is at the centre of the life of the Palazzo. Execute the preparation of a Sicilian family gathering, where food is unifying force of social life.

A taxi from Catania airport to Linguaglossa costs 100/120€.
