Ben Tish is a celebrated Chef, Restaurateur, Food Consultant, Cookbook Author, and Cookery Teacher with a passion for bringing vibrant flavors to life.
His latest cookbook, "Sicilia: A Love Letter to the Food of Sicily," published by Bloomsbury,

is a heartfelt tribute to one of Europe’s most ancient and diverse culinary traditions.

About Etna Volcano
& Etna Wine Region

Etna, the greenest area of Sicily, is a haven for pioneering agricultural entrepreneurs who have been cultivating and exporting Etna wines

since the late 1880s.

The landscape is a striking mosaic of terraced hills, where indigenous grape varieties and olive trees have been nurtured for centuries, reflecting the region’s deep agricultural roots.


The northern slopes of Etna, particularly around Linguaglossa,

enjoy a unique microclimate shaped by mild temperatures

and refreshing breezes from the Ionian Coast.

This combination of fertile volcanic soil and favorable conditions has positioned the Etna region as a cornerstone of Sicilian winemaking, producing internationally celebrated wines and showcasing the exceptional quality of its terroir.

Day by day
ITINERARY

DAY 1

Arrive at the stunning accommodation, where you’ll be greeted

with a welcome drink and a briefing about the immersive culinary journey ahead. After settling in, enjoy a guided tour through

the estate's beautiful vineyards. As you take in the breathtaking views of Mount Etna, you’ll be treated to an aperitif paired with wine from the estate, immersing you in the region’s rich flavors. In the evening, relax with a light buffet dinner, marking the beginning of your unforgettable culinary adventure.

DAY 2

Start your day with a hearty breakfast before embarking on a trekking adventure around the majestic Mount Etna. Experience the rugged beauty of the volcano’s slopes as you explore its volcanic terrain

and unique ecosystems.

Following the hike, enjoy a light lunch

at a nearby winery with a contemporary design, seamlessly blending into the landscape. The winery also houses an art gallery, offering

a fusion of fine wine, modern architecture, and art.

Afterward, spend your afternoon at leisure, relaxing at the hotel

or taking a refreshing dip in the pool. In the evening, gather

for an aperitif followed by a delightful dinner at Palazzo Previtera, where you’ll savor the best of local Sicilian flavors.

DAY 3

The day begins with a visit to a pistachio farm in Bronte, where you’ll learn about the cultivation of this iconic Sicilian crop. Enjoy a tasting session that highlights the distinct flavors of this cherished nut.

Next, experience a wine tasting at a local Etna wine producer, exploring the complex and unique profiles of wines grown

on the slopes of the volcano. Afterward, relax and enjoy some free time at the hotel.

Later in the afternoon, head to a historic 16th-century olive oil farm nestled on the slopes of Etna. Explore the ancient rock-hewn wine presses, which offer a fascinating insight into the region’s long-standing oil and winemaking traditions. Participate in a foraging activity to gather wild herbs, which will be used in preparation

for a special dinner.

To end the day, award-winning pastry chef Giovanna Musumeci will join us for a granita-making demonstration and tasting, discovering the traditional techniques behind this iconic Sicilian treat.

DAY 4

Travel to Catania, a lively city steeped in history, and visit its vibrant local market. Explore the bustling stalls, sampling street food and experiencing the authentic tastes of Sicily.

After a leisurely lunch at the market, return to the hotel for some free time to relax or explore the surrounding area. In the late afternoon, gather for a cooking session with renowned chefs Ben Tish

and Accursio Craparo. Watch as they collaborate to prepare a special menu, showcasing their creative approach to Sicilian cuisine.

Enjoy a gourmet dinner featuring the chefs' culinary creations,

paired with wines from a local winemaker.

DAY 5

On your final morning, begin the day with breakfastand join Giovanna for a hands-on cannoli-making workshop. Learn the art of crafting this iconic Sicilian pastry, from the crispy shell to the velvety ricotta filling. After the workshop, bid farewell to the experience, taking with you cherished memories of the flavors, landscapes, and cultural treasures of Mount Etna.
